Soon after Ancora opened in San Francisco this summer, the owners started stamping receipts with a reminder in red text: The seafood-centric restaurant doesn’t use tips. Instead, diners are charged an automatic 20% service fee.

Ancora is one of several new tipless Bay Area restaurants that opened this year with a service charge, marking a shift toward permanence for gratuity-free models. The wave of newcomers immediately embracing tipless models includes high-end destinations such as the Michelin-starred Cyrus in Napa, buzzy neighborhood restaurants like Oakland’s produce-centric Pomet and casual spots like Morning Wood, a Hawaiian-Japanese brunch favorite in San Mateo. Liholiho Yacht Club, one of San Francisco’s most popular restaurants, reopened in November after a long pandemic hiatus with a notable change: no more tips.
